I have never tasted anything made by Sandy, our B&B hostess, that was not super good! Here are two recipes of hers. She made both for us for our Friday night supper. All the food was super! I hope to get the breakfast fritata recipe too.
Romaine with Oranges
2 romaine lettuce
1 can mandarin oranges
1 C. chopped pecans (roasted in oven about 1-2 minutes)
Dressing:
1/4 C. red wine vinegar
1/2 C. vegetable oil
1/4 C. sugar
1 tsp. salt
1/2 small red onion, chopped
1 tsp. dry mustard
2 Tbsp. water
Mix dressing in just before serving.
Chicken with Tomato, Mushrooms & Cheese
boneless, skinless chicken breasts
1 can diced tomatoes
mozzarella cheese
fresh mushrooms
basil
garlic powder (as much as you like)
salt & pepper
Put small amount of tomatoes on bottom of casserole dish. Layer chicken on top. Sprinkle basil, garlic powder, salt & pepper on chicken breasts. Cover with rest of diced tomatoes. Slice as many mushrooms as you like on top. Cover with mozzarella cheese. Sprinkle with Parmesan cheese and basil. Bake in 350 degree oven for about 35-40 minutes.
