NEW RECIPE


Veggie Cheese Dish
(I found this recipe in the newspaper today and it is yummy! I love things that can be prepared before hand when we have company. This time I even made it just for us, to see if we like it. We do! This is the way I came upon a great favorite of ours: Gourmet Shepherd's Pie. I must see if I have ever posted it, because it is another good one!)

2 C broccoli
1 C cauliflower
1 green onion, chopped
1 can cream of mushroom soup
2 eggs, beaten
1/2 C grated cheddar cheese

Cut up broccoli and cauliflower, bring water to a boil and simmer for 5 min; drain and cool.  Put into casserole dish.  Mix onion, soup, eggs, mayo and cheese.  Pour over veggies.  Sprinkle with cheese.  Mix croutons and melted butter.  Sprinkle on top.  Bake at 350 for 45 min.
***I would cut down on the mayo.  It was a little soupy, and maybe let it sit 10 min. when it comes out of the oven.

Topping: 1/2 C grated cheddar cheese, 1/2 C melted butter (I used way less),
Croutons (I use cubed soft bread.)

* This casserole was better the day after! It wasn't as soupy, but wasn't dry either.
